Professor Gourmand — May 2024

I started on May 1 at Redbird. It was as if I hadn’t been there in months. I started with one of their Triple Crown drinks, The Belmont Breeze — Knob Creek Bourbon, Amontillado sherry, pomegranate, and lemon — JUST perfect in its subtlety and a very good accompaniment to the Chawanmushi with Maine lobster, enoki, charred scallions and Sichuan chili oil. The kitchen was unusually on point for this meal. Next, the pappardelle with rabbit, oven-dried tomatoes and parmigiano Reggiano which Chris paired with a BIG 2022 Monterey Cabernet Sauvignon from Vöwel Vineyards — this will be a good wine for at least the next twenty…
